I have so many hobbies and interests I can hardly
keep up with them.  One of my favorite hobbies is
Mycology, the study of mushrooms.  

I have been hunting, eating and selling wild
mushrooms for over thirty years.  Walking through
the woods, cemeteries, fields and people's back
yards and coming up with a delicious meal for the
low price of nothing is a great feeling.  An even
greater feeling is getting paid to do it.  I found out a
long time ago - money DOES grow on trees!
1 lb. Hen of the Woods mushrooms (if out of
season use Baby Bella mushrooms

1 quart chicken broth
1 medium onion chopped
1/4 lb. butter
6 Tbls. flour
2 cans evaporated milk
2 Tbls. Sherry (optional)
1 cup heavy cream
1 tsp. salt
1 tsp. white pepper

Chop mushrooms, simmer covered in broth
with onion twenty minutes.

Melt butter in saucepan, add the flour and
stir with a wire wisk until blended.  
Meanwhile bring milk to a boil and add to the
butter, flour mixture stirring vigorously until
the sauce is thickened and smooth.

Combine the sauce with the mushroom-broth
mixture.  Add the cream.  Season to taste with
the salt and pepper.

If desired, add the Sherry just before serving.

Again, the Sherry is optional and the bisque is
even better the next day.  IF YOU CAN WAIT!!!
